Subject	Coolant temp readings fluctuate?

Message	MDM 100 in cabin for coolant temp, live at beach, and it will go to 195 then as I accelerate it will drop and go back up within seconds. I noticed this a month ago, no leaks, bubbles, new temp sensor checked harness leads all good. I'm stumped
